<span style="font-size: large;"><br /></span><span style="font-size: large;">Philosophy aside, I would like you all to give this really simple and easy fish curry recipe a try! I have prepared this quite often at home but rarely got around to taking a snap of the dish :) I have a traditional 'meen chatti' (earthen pot) handed over by my amma to me, which I always make use whilst making this dish :D</span><br />

<span style="font-size: large;">We use similar coconut ground mixture while preparing toor dal (parippu) curry with fried shallots and curry leaves garnish. This was sort of my staple food during school days (slurp!!)... and it is yet to make way to my little space here.</span><br />

<span style="font-size: large;">Small piece Ginger</span><span style="font-size: large;">, finely chopped</span><br />
<span style="font-size: large;">1/2 cup Grated coconut</span><br />
<span style="font-size: large;">Few Cumin seeds</span><br />
<span style="font-size: large;">1/4 tsp Turmeric powder</span><br />
<span style="font-size: large;">Salt, to taste</span><br />
<span style="font-size: large;">Water, as required</span><br />
<span style="font-size: large;">2 Green chillies, slit lengthwise</span><br />
<span style="font-size: large;">1 Tomato</span><span style="font-size: large;">, roughly sliced</span><br />
<span style="font-size: large;">Few Curry leaves</span><br />

<span style="font-size: large;">Method:</span><br />

<li><span style="font-size: large;">Tip in the cleaned fish pieces along with little salt and turmeric powder in an earthen pot or any pot with enough water to cook the fish.</span></li>
<li><span style="font-size: large;">Cover and cook for few mins and add the slit green chillies.</span></li>
<li><span style="font-size: large;">Meanwhile grind the grated coconut, cumin seeds, turmeric powder, salt with water (as required) to a smooth paste.</span></li>
<li><span style="font-size: large;">Add the ground coconut mixture to the fish and add the sliced tomatoes too.</span></li>
<li><span style="font-size: large;">Let the whole mixture boil for few mins</span><span style="font-size: large;"> until the tomatoes gets cooked well.</span></li>
<li><span style="font-size: large;">Add the curry leaves, t</span><span style="font-size: large;">aste and adjust salt as preferred. </span></li>

<span style="font-size: large;">Oil, to prepare seasoning</span><br />

<span style="font-size: large;">Few Shallots, thinly sliced </span><br />

<span style="font-size: large;">Method:</span><br />

<li><span style="font-size: large;">In a pan, cook the sliced ash gourd and green chillies with thin coconut milk just enough to cover the vegetable slices. </span></li>
<li><span style="font-size: large;">Once they are cooked, add the cooked black eyed beans and salt and mix well.</span></li>
<li><span style="font-size: large;">Pour in, the thick coconut milk and cook on low flame further for 5 mins.</span></li>
<li><span style="font-size: large;">Remove from fire and prepare the seasoning.</span></li>
<li><span style="font-size: large;">In a small pan, add some oil and fry the thinly sliced shallots until golden brown.</span></li>
<li><span style="font-size: large;">Then add the curry leaves and tip it all into the prepared dish.</span></li>
</ul>

<span style="font-size: large;">Notes: Do not overcook the black eyed beans or ash gourd. Let it retain its shape. You can replace the thin coconut milk with water, but it tastes better if you cook ash gourd in thin coconut milk. A little salt is added whilst cooking the black eyed beans, so be cautious while adding more salt to dish. </span><br />

<li><span style="font-size: large;">Heat oven to 180 C/fan 160 C/gas 4. </span></li>
<li><span style="font-size: large;">Beat together 225 g softened unsalted butter and 225 g caster sugar until pale and creamy, then add 4 eggs, one at a time, slowly mixing through. </span></li>
<li><span style="font-size: large;">Sift in 225 g flour, then add the vanilla extract and mix until well combined. </span></li>
<li><span style="font-size: large;">Line two sandwich tins with grease proof paper, then spoon in the mixture and level the top with a spoon.</span></li>
<li><span style="font-size: large;">Bake for 35-40 mins or until a thin skewer inserted into the </span><span style="font-size: large;">centre of the cake comes out clean. </span></li>
<li><span style="font-size: large;">While the cake is cooling in its tin, mix together the rose extract and 35 g caster sugar with little water to make the drizzle. Prick the warm cake all over with a skewer or fork, then pour over the drizzle.</span></li>
<li><span style="font-size: large;">Leave in the tin until completely cool, then remove and assemble. </span></li>

<li><span style="font-size: large;">Slather some strawberry jam on one cake and then add a layer of sliced strawberries on top. </span></li>
<li><span style="font-size: large;">Now tip in the whipped cream and level it using a spatula or spoon.</span></li>
<li><span style="font-size: large;">Slather some strawberry jam on the second cake and place it on top of the whipped cream layer.</span></li>
<li><span style="font-size: large;">Dust some icing sugar on top and decorate with few fresh strawberries.</span></li>
</ul>

<span style="font-size: large;">Notes: Since I used the rose extract drizzle, I made the whipped cream with very less sugar and used just a thin spread of jam.</span><br />
<span style="font-size: large;">Also be cautious when using the rose extract as they are very strong! I did get the feedback from my personal baker expert, friend Nishima to go mild on the rose extract :)</span><br />

<span style="font-size: large;">I must say these are irresistible!!! Had the opportunity to bake these for my best friend's son's first birthday party :) So you should know these are super special and an amazing addition to any get to-gathers. </span><span style="font-size: large;">Everyone at the party loved it and w</span><span style="font-size: large;">hat more gratification do you need when the people for whom you baked are HAPPY! </span><br />

</span> <span style="font-size: large;">I had used the food processor to whiz z the pastry and the kitchen had lots going on at the moment so we had the pastry dough in fridge for few hours before cutting out the hearts. The dough was very soft and for better handling, the cut out cookies were refrigerated for 15 mins before popping into the hot oven. They baked into perfection and it was fun sandwiching the two cookies with our favorite berry conserve.</span><br />

<span style="font-size: large;">200 g Butter, cut into small cubes</span><br />

<span style="font-size: large;">2 Egg yolks</span><br />
<span style="font-size: large;">Any jam, as required to sandwich</span><br />

</span> <span style="font-size: large;">Method</span><br />

<ul style="text-align: left;">
<li><span style="font-size: large;">Preheat the oven to 170 C/ 325 F/ Gas 3.</span></li>
<li><span style="font-size: large;">Place the flour, butter, icing sugar and salt into a bowl. Using your fingertips, rub the ingredients together until the mixture resembles breadcrumbs.</span></li>
<li><span style="font-size: large;">Now tip in the egg yolks and mix until a dough forms. </span></li>
<li><span style="font-size: large;">Turn the dough out onto a lightly floured work surface and roll out to a thickness of about 0.5 cm. </span></li>
<li><span style="font-size: large;">Using a heart shape 4 cm cookie cutter, cut out heart shapes from the rolled dough.</span></li>
<li><span style="font-size: large;">Count and divide the cookies in to two halves.</span></li>
<li><span style="font-size: large;">Then using a 2 cm heart shape cutter, make a second heart cut out at the center for one half of the quantity.</span></li>
<li><span style="font-size: large;">Now place all the cookies on a baking tray and refrigerate for few mins.</span></li>
<li><span style="font-size: large;">Then bake the cookies for 10 - 12 mins, or until light golden-brown and crisp. Remove and transfer to a wire rack to cool.</span></li>
<li><span style="font-size: large;">Using a teaspoon, place a small dollop of jam on a whole cookie.</span></li>
<li><span style="font-size: large;">Place a cookie (with a heart shaped hole) over the whole cookie. Repeat until all the cookies are done with jam.</span></li>
</ul>

<span style="font-size: large;">Note: At any point if the dough gets difficult to handle, cling wrap it well and refrigerate for sometime. It will be easy to cut it into different shapes when you take it out of the fridge.</span><br />

<span style="font-size: large;">Well this was my first Jam project :) An abundance of </span><span style="font-size: large;">plums and a productive afternoon resulted in some fresh jarful of these fruity goodness.</span><br />

<span style="font-size: large;">1&1/2 cup Wheat flour</span><br />
<span style="font-size: large;">2 Tbsp Semolina</span><br />
<span style="font-size: large;">Few Ajwain seeds</span><br />
<span style="font-size: large;">Little oil for dough</span><br />
<span style="font-size: large;">Around 1/2 cup Water</span><br />
<span style="font-size: large;">Salt, to taste</span><br />
<span style="font-size: large;"><br /></span>
<span style="font-size: large;">Vegetable Stuffing</span><br />
<span style="font-size: large;">1 Onion, finely chopped</span><br />
<span style="font-size: large;">2 Tbsp Ginger & Garlic, very finely chopped</span><br />
<span style="font-size: large;">2 Green Chillies, very finely chopped</span><br />
<span style="font-size: large;">3 Potatoes, boiled and mashed</span><br />
<span style="font-size: large;">1 cup Green peas, used frozen</span><br />
<span style="font-size: large;">1/4 tsp Turmeric powder</span><br />
<span style="font-size: large;">1 tsp Garam masala</span><br />
<span style="font-size: large;">Few Coriander leaves, finely chopped</span><br />
<span style="font-size: large;">Salt, to taste</span><br />
<span style="font-size: large;">Oil, little for sauteing and lot more for deep frying</span><br />
<span style="font-size: large;"><br /></span>
<span style="font-size: large;">Method:</span><br />
<span style="font-size: large;"><i>For preparing pastry & stuffing</i></span><br />
<ul style="text-align: left;">
<li><span style="font-size: large;">For making wheat pastry, make a dough (chappathi like) by combining wheat flour, semolina. ajwain seeds, salt, oil and water.</span></li>
<li><span style="font-size: large;">Cover and keep aside while you prepare the stuffing.</span></li>
<li><span style="font-size: large;">Heat little oil in a pan, add the ginger, garlic and green chillies. Saute until the raw smell goes and tip in the chopped onions.</span></li>
<li><span style="font-size: large;">Once the onions turn golden brown, add garam masala, turmeric powder and mix well.</span></li>
<li><span style="font-size: large;">On lower flame, add the mashed potatoes and salt and mix well.</span></li>
<li><span style="font-size: large;">Add in the green peas, coriander leaves and saute further for few mins until well combined.</span></li>
<li><span style="font-size: large;">Remove from fire and keep aside. </span></li>
</ul>
<span style="font-size: large;"><i>For Preparing Samosas</i></span><br /><ul style="text-align: left;">
<li><span style="font-size: large;">Roll out a small ball size dough into thin circle and cut them into half making two semi circles.</span></li>
<li><span style="font-size: large;">Fold each semi circle into a cone shape and fill them with the prepared stuffing.</span></li>
<li><span style="font-size: large;">Press the edges together and seal any open edges by dampening inside with a little water.</span><span style="font-size: large;"> </span></li>
<li><span style="font-size: large;">Repeat this until whole of dough and/or stuffing is completely used up.</span></li>
<li><span style="font-size: large;">Heat oil for deep frying the samosas. Over medium heat, flip samosas on both sides until they turn golden in color.</span></li>
<li><span style="font-size: large;">Drain them on a kitchen towel and s</span><span style="font-size: large;">erve with your favorite chutney or dips.</span></li>

<li><span style="font-size: large;">Preheat oven to 350F/ 180C or 160C Fan. Line a cupcake tray with paper liners and keep aside.</span></li>
<li><span style="font-size: large;">In a large mixing bowl,tip in plain flour, sugar, cocoa powder, baking soda and salt. Mix well until combined.</span></li>
<li><span style="font-size: large;">Pour in the warm water, vanilla extract, oil and vinegar. Using a whisk, mix well just until combined. Do not over mix.</span></li>
<li><span style="font-size: large;">Using a ice-cream</span><span style="font-size: large;"> scoop, fill the cupcake liners almost 3/4th full. (I got exactly 12 cupcakes).</span></li>
<li><span style="font-size: large;">Bake them for about 22 minutes or until a skewer inserted into the center of a cupcake comes out clean.</span></li>
<li><span style="font-size: large;">Remove from oven and let it cool completely on a wire rack.</span></li>
<li><span style="font-size: large;">Prepare your desired frosting and decorate the cupcakes before serving.</span></li>

<li><span style="font-size: large;">Rinse and cook toor dal </span><span style="font-size: large;">with enough water and little salt </span><span style="font-size: large;">until done. I use pressure cooker as it cooks a lot quicker that way. Dal should be soft and mushy now. </span><span style="font-size: large;">Safely open the pressure cooker after it cools down. </span></li>
<li><span style="font-size: large;">In a pan, heat some oil/ ghee and splutter cumin seeds. Add the chopped onions and saute it further until it starts to turn brown.</span></li>
<li><span style="font-size: large;">Add the chopped ginger and slit green chillies, mix </span><span style="font-size: large;">well.</span></li>
<li><span style="font-size: large;">Tip in the chopped tomato and saute until it turns soft. Mix in turmeric powder, garam masala (if using), chopped coriander leaves.</span></li>
<li><span style="font-size: large;">Now add the cooked dal and stir well. Add water (if required) to get the desired consistency. Adjust the salt on tasting.</span></li>
<li><span style="font-size: large;">Remove from fire and garnish with some more coriander leaves.</span></li>
</ul>

<span style="font-size: large;">1 Tsp Garam masala or Meat masala </span><br />

<li><span style="font-size: large;">Marinate paneer cubes in red chilli powder, turmeric powder and salt for 15 mins.</span></li>
<li><span style="font-size: large;">In a pan, heat some oil and shallow fry the paneer cubes. Keep it aside.</span></li>
<li><span style="font-size: large;">In same pan, heat oil and add the cloves and cinnamon. Then add the sliced onions and saute until they turn soft.</span></li>
<li><span style="font-size: large;">Now add the chopped ginger-garlic and green chillies and fry them until the raw smell goes. </span></li>
<li><span style="font-size: large;">Tip in the coriander powder and garam masala or meat masala and s</span><span style="font-size: large;">aute further for few mins.</span><span style="font-size: large;"> </span></li>
<li><span style="font-size: large;">Add the chopped tomato and cook until it turns soft.</span></li>
<li><span style="font-size: large;">Add the fried paneer cubes and combine well with the onion tomato mixture.</span></li>
<li><span style="font-size: large;">Pour in the coconut milk, salt and cook for 8 more mins.</span></li>
<li><span style="font-size: large;">Remove from fire and mix in the chopped coriander leaves. </span><span style="font-size: large;">Serve hot.</span></li>

<li><span style="font-size: large;">In a pressure cooker, add washed rice, sugar and 2 cups of milk. Also add a pinch of salt. (Do not add water).</span></li>
<li><span style="font-size: large;">Let this cook for a whistle or two and then open the pressure cooker lid when it is safe to. </span><span style="font-size: large;">The rice must be cooked by now. </span></li>
<li><span style="font-size: large;">Add the remaining 2 cups of milk and let it boil. </span></li>
<li><span style="font-size: large;">Pour in the condensed milk and let it boil further for 3 mins, stirring all the while. </span></li>
<li><span style="font-size: large;">Remove from fire and keep aside.</span></li>
<li><span style="font-size: large;">Heat little ghee in a pan, fry raisins and cashews to a golden brown color. Add this to the payasam along with few strands of saffron.</span></li>

<span style="font-size: large;">1 cup Rice Flour </span><br />
<span style="font-size: large;">Salt, to taste</span><br />

<span style="font-size: large;">1 cup Grated Coconut</span><br />
<span style="font-size: large;">1/4 cup Sugar</span><br />

<li><span style="font-size: large;">In a pan, saute grated coconut and sugar until the whole mixture is well combined. Remove from fire and keep aside.</span></li>
<li><span style="font-size: large;">Now make a dough by adding hot water little by little to the rice flour & salt. </span></li>
<li><span style="font-size: large;">Take a small ball of dough and flatten it out on a piece of baking paper using your fingers (originally we use banana leaf but it is hard for me to source any).</span></li>
<li><span style="font-size: large;">Spread the sweet coconut mixture and fold the baking paper in half, sealing the edges.</span></li>
<li><span style="font-size: large;">Transfer the Ada into a steamer and let it cook for around 12 mins or until cooked.</span></li>
<li><span style="font-size: large;">Slice them before serving and enjoy!</span></li>

<li><span style="font-size: large;">Now tip in the rava or semolina and stir the whole mixture for around 8 mins or until it turns golden in color.</span></li>
<li><span style="font-size: large;">Add sugar and warm milk and continue stirring for another min. Add saffron (if using) to the warm milk.</span></li>
<li><span style="font-size: large;">Remove from fire. Divide the mixture into equal sized balls while still warm. </span></li>

<li><span style="font-size: large;">Cover and cook the chopped </span><span style="font-size: large;">Vellarikka / Cucumber in a pan with little water and salt until it becomes soft and glass like. (you can drain off excess water or use very little water while cooking)</span></li>
<li><span style="font-size: large;">Meanwhile grind </span><span style="font-size: large;">together grated c</span><span style="font-size: large;">oconut, m</span><span style="font-size: large;">ustard seeds, c</span><span style="font-size: large;">umin seeds, g</span><span style="font-size: large;">reen chillies, g</span><span style="font-size: large;">inger and </span><span style="font-size: large;">yoghurt to a paste.</span></li>
<li><span style="font-size: large;">Now add the ground coconut mixture to cooked cucumber under low flame and cook further for 2-3 mins. </span></li>
<li><span style="font-size: large;">Remove from fire and prepare the seasoning.</span></li>
<li><span style="font-size: large;">Heat little oil in a pan and fry a Tbsp of grated coconut until it turns brown and add few dry red chillies and curry leaves. Pour this over the prepared pachadi in a dish.</span></li>

<li><span style="font-size: large;">Now tip in the finely mashed ginger pieces and green chilli's. </span><span style="font-size: large;">Sauté</span><span style="font-size: large;"> them further for a min or until the raw smell goes.</span></li>
<li><span style="font-size: large;">Add the jaggery blocks and let it melt.</span></li>
<li><span style="font-size: large;">Pour in the tamarind extract and let the whole mixture boil.</span></li>
<li><span style="font-size: large;">Add the turmeric powder, chilli powder, salt and mix well. </span></li>
<li><span style="font-size: large;">You will see that the mixture will start to become thick. Then you can remove it from fire.</span></li>
<li><span style="font-size: large;">Prepare the seasoning by spluttering few mustard seeds and curry leaves in some hot oil. Mix well into the prepared puli inji and serve.</span></li>

<span style="font-size: large;">3 - 4 Potatoes, peeled and chopped into cubes</span><br />
<span style="font-size: large;">Few Fennel seeds, Cloves and a piece of cinnamon</span><br />
<span style="font-size: large;">2 Shallots, sliced</span><br />
<span style="font-size: large;">1 cup Grated coconut</span><br />
<span style="font-size: large;">1 Onion, finely chopped</span><br />
<span style="font-size: large;">2 Green chilies, slit</span><br />
<span style="font-size: large;">1/4 tsp Turmeric powder</span><br />
<span style="font-size: large;">1 tsp Red chilly powder</span><br />
<span style="font-size: large;">3 tsp Coriander powder</span><br />
<span style="font-size: large;">1/4 tsp freshly ground black pepper</span><br />
<span style="font-size: large;">Few Curry leaves</span><br />
<span style="font-size: large;">Few</span><span style="font-size: large;"> </span><span style="font-size: large;">Mustard seeds</span><br />

<span style="font-size: large;">Method:</span><br />
<ul style="text-align: left;">
<li><span style="font-size: large;">Cook the cubed potatoes in a pressure cooker/ pan until soft. Drain the water and keep the cooked potatoes aside.</span></li>
<li><span style="font-size: large;">Heat around 1 tsp of coconut oil in a pan and add fennel seeds, cloves and cinnamon. Tip in the sliced shallots and saute them until they turn translucent.</span></li>
<li><span style="font-size: large;">Now add the grated coconut to it and roast until it turns reddish brown. Add turmeric powder, chili</span><span style="font-size: large;"> powder, coriander powder, crushed black pepper, salt and saute for a few more seconds. Let this mixture cool slightly and then grind it to a fine paste by adding little water.</span></li>
<li><span style="font-size: large;">Meanwhile tip in the finely chopped onions with some oil in a pan. Saute for 2 mins and add the green chilies and salt. As the onions start to turn brown, add the potatoes and mix well further for 2 mins. </span></li>
<li><span style="font-size: large;">Now add the ground coconut mixture and mix well. Cook until the gravy achieves your desired consistency. </span></li>
<li><span style="font-size: large;">In a small pan, heat a tsp of oil and splutter mustard seeds followed by few dry red chilies and curry leaves. Add this to the potato curry and your dish is ready to be served.</span></li>

<span style="font-size: large;">Notes : The gravy tends to thicken a bit over time, so adjust the consistency of gravy as per choice. If you want to add a hint of tanginess, you could add a finely chopped tomato along with the cooked and cubed potatoes. </span><br />

<span style="font-size: large;">1 cup Bread crumbs</span><br />

<li><span style="font-size: large;">Cook the potatoes and mash them. Keep aside to let it cool.</span></li>
<li><span style="font-size: large;">Heat a Tbsp of oil in a pan and add chopped onions. Once it starts to change color, add ginger-garlic paste and chopped green chilies. Cook until the raw smell goes.</span></li>
<li><span style="font-size: large;">Add the masala powders and saute the mixture.</span></li>
<li><span style="font-size: large;">Now add the mashed potatoes, salt and mix well again.</span></li>
<li><span style="font-size: large;">Add the chopped coriander leaves and saute for further few mins until well combined.</span></li>
<li><span style="font-size: large;">Shape the mixture into small round balls. ( Make sure the mixture is cool enough for you to handle it)</span></li>
<li><span style="font-size: large;">Beat an egg in a bowl with a pinch of salt and keep ready.</span></li>
<li><span style="font-size: large;">Dip the patties in beaten egg mixture first and then roll all the sides in bread crumbs.</span></li>
<li><span style="font-size: large;">Heat oil in a pan and deep fry these balls till its golden in color.</span></li>
<li><span style="font-size: large;">Drain on a paper towel and serve hot.</span></li>

<li><span style="font-size: large;">Prepare the batter by combining the gram flour, turmeric powder, chili powder, salt and water until it is lump free.</span></li>
<li><span style="font-size: large;">Dip each sandwich in the batter till it is evenly coated on all sides.</span></li>

The cake was comparatively easy to bake & decorate. I had more trouble transferring the final piece to the venue added to the fact that I was travelling to India the very next day... early in the morning! </span></div>

I myself am impressed :) Nikhil used to keep requesting for mutton curry but I never really thought I could handle this meat. At-last for his sake I gave it a try and guess what?? <span style="font-size: large;">500 g Mutton, cut into small pieces and cleaned</span><br />
<span style="font-size: large;">2 Onions, chopped</span><br />
<span style="font-size: large;">1 Tomato, chopped</span><br />
<span style="font-size: large;">3 Green Chillies, slit lengthwise</span><br />
<span style="font-size: large;">Small piece Ginger, finely chopped</span><br />
<span style="font-size: large;">Few Garlic cloves</span><span style="font-size: large;">, finely chopped</span><br />
<span style="font-size: large;">Oil, as required</span><br />
<span style="font-size: large;">Salt, to taste</span><br />
<span style="font-size: large;">1/4 tsp Turmeric powder</span><br />
<span style="font-size: large;">2-3 Tbsp Coriander seeds (I used coriander powder)</span><br />
<span style="font-size: large;">Few Fennel seeds</span><br />
<span style="font-size: large;">3 or 4 Pearl onions/ Shallots</span><span style="font-size: large;">, finely sliced</span><br />
<span style="font-size: large;">Few Curry leaves</span><br />
<span style="font-size: large;">Few Black Pepper corns, roughly crushed</span><br />
<span style="font-size: large;">Few Cloves and a Cinnamon stick</span><br />
<span style="font-size: large;">4-5 Tbsp Coconut milk powder</span><br />
<span style="font-size: large;"><br /></span>
<span style="font-size: large;">Method:</span><br />
<ul style="text-align: left;">
<li><span style="font-size: large;">Pour some oil in the pressure cooker and sauté</span><span style="font-size: large;"> the chopped onions, ginger, garlic and green chillies. </span></li>
<li><span style="font-size: large;">Once the onions turn translucent, add the mutton pieces, salt and turmeric powder.</span></li>
<li><span style="font-size: large;">Pour just enough water to cook the mutton. </span><span style="font-size: large;">Now pressure cook the mutton until it is cooked.</span></li>
<li><span style="font-size: large;">Meanwhile, dry roast the coriander seeds and fennel seeds for a min. Add few cloves and a cinnamon stick and roast further for two mins. Keep it aside for a while to cool and then blend it in a mixer.</span></li>
<li><span style="font-size: large;">Once cooled, open the pressure cooker lid with caution. Add the coriander and fennel seed mixture.</span></li>
<li><span style="font-size: large;">Let the curry boil until the water is considerably reduced.</span></li>
<li><span style="font-size: large;">Now tip in the coconut milk powder and stir immediately to clear any lumps. (Alternatively you can pour thick coconut milk).</span></li>
<li><span style="font-size: large;">Cook further until the dish reaches your preferred consistency.</span></li>
<li><span style="font-size: large;">In another small pan, fry the sliced pearl onions in some oil/ghee until it turns brown. Add the curry leaves and few crushed pepper corns and saute further for a min.</span></li>
<li><span style="font-size: large;">Use this to garnish the mutton curry while serving.</span></li>

<span style="font-size: large;">1 & 1/2 cup Milk</span><br />
<span style="font-size: large;">1 cup Sugar</span><br />
<span style="font-size: large;">3 Tbsp Cocoa Powder</span><br />
<span style="font-size: large;">2 Tbsp Cornflour</span><br />
<span style="font-size: large;">1 tsp Vanilla extract</span><br />
<span style="font-size: large;">200 g Digestive/ Rich Tea/ Marie biscuits,crushed</span><br />
<span style="font-size: large;">100 g Salted butter, cut into small cubes</span><br />
<span style="font-size: large;">1 cup Double Cream, whipped (optional)</span><br />

<span style="font-size: large;">Method:</span><br />
<br />
<ul style="text-align: left;">
<li><span style="font-size: large;">Prepare a thick chocolaty sauce by boiling together milk, sugar, cocoa powder and cornflour, stirring continuously. Let it cool completely, then stir in the vanilla extract and mix well.</span></li>
<li><span style="font-size: large;">Meanwhile, tip in the crushed biscuits and cubed butter into a mixing bowl. Mix them well with your fingertips until they resemble coarse breadcrumbs. Keep some biscuit crumbs aside for decoration purpose.</span></li>
<li><span style="font-size: large;">Spoon and divide layer's of biscuit mixture and chocolate sauce alternately into the glasses. </span></li>
<li><span style="font-size: large;">Dust the reserved biscuit crumbs on top or you can top with two dollops of whipped cream in each glass.</span></li>
<li><span style="font-size: large;">Refrigerate for 3 hours and serve cold.</span></li>
