- As per the recipe, bring the ingredients to room temperature. This helps in mixing evenly without over-beating resulting in perfect cup cakes. Over-beating will cause the cake to be more chewy than being perfectly soft and moist.
- Use good quality muffin/cup cake trays which are on the heavier side. After scooping cake batter to fill cup cake liners/ muffin tray, ensure that you fill 1/2 to 2/3 full. Any lesser would demand more frosting to look its original size or any more would result in a mess. Use paper liners in tray or grease them well for easy removal of cup cakes from tray.
- Use exact quantity of good quality ingredients and bake at the required oven temperature. Test for doneness using a toothpick or skewer inserted into the center of the cupcakes after the minimum cooking time. If they are not finished baking, keep for some additional time as required.
- You could try and use your favorite cake batter to make cup cakes. You need to keep an eye on the timing still as it would need lesser time than the cake.
- Its better to bake only one tray of cupcakes at a time. These little frosted beauties are best eaten on the same day too.
