✌ Vanilla Butter Cookies ✌ {Egg-less}

This was one of those days, I really wanted to bake something but there were no eggs at home. Glum and broody I decided to find my luck among egg-less recipes! Defeated I decided to walk up to our local store to get some eggs and adorn my baking apron. That's when my bestie pinged me this awesome and wonderful {egg-less} recipe for melting moments aka vanilla butter cookies. It is a very simple basic cookie recipe and the results are truly irresistible. So drop your siesta plans and get cookie-ing!!

Vanilla Butter Cookies!!!
Ingredients:
1 cup Unsalted Butter, softened
1/2 cup Caster Sugar
1&1/2 cup Plain Flour, sifted
1/2 cup Cornflour
1/2 tsp Salt
1 Tbsp Vanilla extract
Icing sugar, for dusting

Method:
  • Preheat oven to 180 C/ 160 C fan/ gas 4 and line a cookie sheet with parchment paper.
  • Cream together softened butter and sugar in a large mixing bowl until smooth and creamy. Add the vanilla extract and mix well.
  • Sift together the plain flour and cornflour along with salt.
  • Add the flours to the butter mixture and beat until well combined.
  • At this stage, refrigerate the mix for at least an hour. You can transfer the mixture to baking paper and roll it, as it will be lot easier to cut into discs later or else you could simply shape it into 1" cookie balls too.
  • Later arrange the cookies slightly apart on the lined cookie sheet and slide it into the centre rack of the oven.
  • Bake for about 10 mins till the edges are brown and the cookies are done.
  • Transfer to wire rack and let it cool completely.
  • Now dust with some icing sugar and serve.

Notes: I had baked these simple buttery cookies on a lazy afternoon and had halved the ingredients. It was up for grabs by evening and was truly enjoyed with our favorite cuppa!!!
