Ingredients:
Oil, as required
3 Dry Red Chillies
3 Shallots/ Pearl onions, finely sliced
1 Tomato, finely sliced
1 tsp Kashmiri Chilli powder
1/2 cup Grated Coconut
Salt, to taste

Method:
  • Heat little oil in a pan and add the dry red chillies. Fry it just for a minute and spoon it and keep it aside.
  • Now add the sliced shallots/ pearl onions and saute until it turns translucent.
  • Add the sliced tomato, red chilli powder and salt. Cook until the tomato is cooked well.
  • At this stage, add the grated coconut and mix well further for two mins. Then remove from fire.
  • Once cooled, grind the fried dry red chillies followed by the coconut-onion-tomato mixture. While grinding, no need to add any water and transfer to a serving dish once it reaches your preferred chutney consistency.
Notes: Used to prepare this with Idli/ Dosa's initially but then Nikhil loves to have this chutney with his share of Uppuma too...Yes, it is super tasty to have a freshly prepared scoop of tomato chutney with soft & steaming Uppuma!
