Ada {with sweet coconut filling}
Ingredients:
1 cup Rice Flour
Salt, to taste
Hot Water, as required
1 cup Grated Coconut
1/4 cup Sugar
Method:
- In a pan, saute grated coconut and sugar until the whole mixture is well combined. Remove from fire and keep aside.
- Now make a dough by adding hot water little by little to the rice flour & salt.
- Take a small ball of dough and flatten it out on a piece of baking paper using your fingers (originally we use banana leaf but it is hard for me to source any).
- Spread the sweet coconut mixture and fold the baking paper in half, sealing the edges.
- Transfer the Ada into a steamer and let it cook for around 12 mins or until cooked.
- Slice them before serving and enjoy!
Notes: You can use jaggery instead of sugar for preparing the sweet filling. Also mix in raisins or nuts or cardamom powder as per your taste.
