✼ Chocolate Pot de Crème ✼

I was waiting for an excuse to whip & bake this gorgeous chocolate custard! And yes, when we had some friends coming over for dinner, these little beauties adorned the dinner table. These are easy to whip up and can be made ahead, giving you enough time to relax and enjoy your evening with friends.

Chocolate Pot de Crème's  are a must-try for any chocoholic! The velvety smooth texture of these just melt in your mouth leaving behind the rich dense chocolate taste.

Ingredients:
2 cups Double cream 
½ cup Whole milk
141 g Dark chocolate, good quality & roughly chopped
5 Egg yolks
¼ cup Caster sugar
1 tsp Vanilla extract

Hot water (to fill in roasting pan while baking for uniform heating of custard's).
Whipped cream & Chocolate curls (while serving).

Method:

  • Preheat oven to 148°C/ 128°C fan. 
  • Firstly, simmer both double cream and whole milk in a pan. 
  • Add the chopped dark chocolate and whisk until it is fully melted. (It will start to look like a pan full of hot chocolate).
  • You can keep it aside to cool slightly.
  • Meanwhile combine the egg yolks, caster sugar and vanilla extract until well combined.
  • Now slowly add the chocolate mixture, whisking through until thoroughly incorporated.
  • Using a fine strainer, strain this mixture into a pitcher (this helps in getting the smooth texture for your custards)
  • Pour this mixture into ramekins about 3/4th way up.
  • Transfer the filled ramekins into a roasting pan and slide it into the oven.
  • Now fill the roasting pan with hot water until it reaches half way up the ramekins.
  • Bake for 30 - 35 mins until the custards are set. 
  • After taking out of the oven let the custards cool on a wire rack for sometime.
  • Then you can cover them and keep in fridge until serving.
  • While serving, add a dollop of whipped cream and few chocolate curls.

Notes: You can prepare the whipped cream by combining a cup of double cream, few drops of vanilla extract and a Tbsp of Icing sugar. Whip them using an electric beater until soft peaks are formed.
