Most of us have some easy peasy recipes for a quick fix meal! Well this Variety Rice recipe is a tried and tested one. You can always make a non-veg or a veg version of this rice and keep surprising yourself with a hit over an another. Make a side dish along with this rice Or simply mix in a ravishing raitha or chutney and your meal is ready.
Veg Variety Rice
For a quick fix @ home I had jazzed up a spicy chicken fry alongside this variety rice :)
Ingredients:
2 cups Basmati rice
3 cups Hot water
Few Cloves, Cinnamon & Bay leaves
Ghee/ Butter/ Oil, as required
Salt, to taste
1 Onion, finely chopped
Small piece Ginger, very finely chopped
Few Garlic cloves, very finely chopped
2 Green chillies, very finely chopped
Different Veggies, chopped or prepared
1/2 tsp Garam Masala, optional
Few Cashews and Raisins
Little Lemon juice, optional
Method:
Notes: You can use whatever veggies you prefer or simply decide to use the ones in stock. Here I have used carrots, celery and green peas. You can choose multi coloured veggies to improve the aesthetics!

Method:
- Cook basmati rice with few cloves, cinnamon and bay leaves. Also add little ghee or butter and salt while cooking the rice. (I use 1&1/2 cup hot water for a cup of basmati rice).
- While rice is cooking, prep the veggies!
- Heat little oil in a pan and saute the chopped onions until it turns translucent.
- Add the ginger-garlic-green chillies and saute further until the raw smell goes.
- Now tip in the chopped veggies and saute until done. Add a little garam masala (optional) and salt to taste, mix well.
- Mix in the cooked rice to these sautéed veggies, cover and cook for two minutes under a low flame.
- Remove from fire and keep covered for few more mins.
- Prepare the garnish by frying few cashews and raisins in little ghee/butter.
- While serving, garnish rice with the fried cashews & raisins. You can also squeeze in some lemon juice over the veggie rice for a refreshing twist.
