I must say these are irresistible!!! Had the opportunity to bake these for my best friend's son's first birthday party :) So you should know these are super special and an amazing addition to any get to-gathers. Everyone at the party loved it and what more gratification do you need when the people for whom you baked are HAPPY!
I had used the food processor to whiz z the pastry and the kitchen had lots going on at the moment so we had the pastry dough in fridge for few hours before cutting out the hearts. The dough was very soft and for better handling, the cut out cookies were refrigerated for 15 mins before popping into the hot oven. They baked into perfection and it was fun sandwiching the two cookies with our favorite berry conserve.
Jam Biscuits

Ingredients
250 g Plain flour
200 g Butter, cut into small cubes
100 g Icing sugar
pinch of salt
2 Egg yolks
Any jam, as required to sandwich
Method
Note: At any point if the dough gets difficult to handle, cling wrap it well and refrigerate for sometime. It will be easy to cut it into different shapes when you take it out of the fridge.

Ingredients
250 g Plain flour
200 g Butter, cut into small cubes

Method
- Preheat the oven to 170 C/ 325 F/ Gas 3.
- Place the flour, butter, icing sugar and salt into a bowl. Using your fingertips, rub the ingredients together until the mixture resembles breadcrumbs.
- Now tip in the egg yolks and mix until a dough forms.
- Turn the dough out onto a lightly floured work surface and roll out to a thickness of about 0.5 cm.
- Using a heart shape 4 cm cookie cutter, cut out heart shapes from the rolled dough.
- Count and divide the cookies in to two halves.
- Then using a 2 cm heart shape cutter, make a second heart cut out at the center for one half of the quantity.
- Now place all the cookies on a baking tray and refrigerate for few mins.
- Then bake the cookies for 10 - 12 mins, or until light golden-brown and crisp. Remove and transfer to a wire rack to cool.
- Using a teaspoon, place a small dollop of jam on a whole cookie.
- Place a cookie (with a heart shaped hole) over the whole cookie. Repeat until all the cookies are done with jam.
