Mozzarella In Carrozza - Express Italian Filler

Occasionally I would pick books related to cake decorations from the library. So the last time while returning few books, the librarian asked me when would I be getting them some nicely decorated cupcakes. I knew he was kidding but I gave it a thought anyways. So I decided, the next time I bake fancy cupcakes, I would drop some by the library :) Inspired and encouraged I picked a few additional cook books. Familiar through cookery shows on TV, I picked the book that would bring the spirit of Italy into my kitchen. One of the express recipes that I tried was the Quick Italian filler. Here 'in carrozza' means 'in a carriage', implying the cheese in a sandwich carriage! Enjoy your ride ;)

Mozzarella in Carrozza
Adapted from the book 'Nigella Bites' by Nigella Lawson

Ingredients:
6 slices White bread (usually crusts removed)
1 ball Mozzarella cheese, cut into thin stripes
125 ml Milk
3 Tbsp Plain flour
1 Egg
Salt & Pepper, for taste
Olive oil, for frying

Method:
  • Make sandwiches out of bread and mozzarella, leaving a little margin around edges unfilled with mozzarella cheese stripes.
  • Press the edges together with your fingers to help seal them.
  • Pour the milk into a bowl, the flour into another, and beat the egg with salt & pepper in another.
  • Warm the oil in a pan over medium heat.
  • Dunk sandwiches briefly, one by one in milk, dredge in flour and dip in beaten egg.
  • Fry on each side till crisp and gold and remove to a kitchen towel.
Notes: Cut in half and enjoy with chilli sauce for some added flavor :D When dunking in milk, be careful not to go above a level of mushiness ;)
