I was waiting for an excuse to whip & bake this gorgeous chocolate custard! And yes, when we had some friends coming over for dinner, these little beauties adorned the dinner table. These are easy to whip up and can be made ahead, giving you enough time to relax and enjoy your evening with friends.

Chicken Stew {Kerala style}

Breakfast is an elaborate affair for Keralites. Our authentic breakfast items are wholesome and filling though they may not be easy as flipping an omelette or tipping some cereal into a bowl! Most dishes require prep work and planning to be executed the day before... but they are absolutely awesome :D

Back in the olden days at my home, when there is a super special lunch preparation happening in the kitchen, a coconut milk based stew is prepared for breakfast as it is quick and tasty. Only on such days would a bakery bought bread make it to our special menu! Gone are those days and now bread is quite regular in most households. Appam's are more sought after with stew, but with time and resource crunch, people find the easy way out in bread ;) You should definitely try this chicken stew for its simplicity yet rich & creamy taste.

Nowadays stew has become part of my special breakfast menu! On such days I take it up a notch by making beautiful flower shaped appams to go along with the stew. On not so special days, it is bread that makes it to the table with a steaming pot of creamy stew!

Whoopie Pie's {Daring Baker's Dec challenge}

Another Daring Baker's challenge which I was truly excited to be part of as these whoopie pie's have been in my 'to-bake' list for quite some time :) These little treats are somewhere between a slice of cake and a bite off cookie... Pretty easy to whip and bake too! I had various ideas on the flavors I could mix and pour but I ended up baking a batch of safe but absolutely gorgeous Red Velvet whoopies with classic cream cheese filling. 
As you can see, there is not much red colour on these whoopie's, reason being, me not using much red food colouring and also tipping a tad bit more of cocoa powder :) They look more of a chocolate whoopie, I agree. I had also given a copper tinge to my cream cheese filling purely on an aesthetic point of view! 
Whatsoever Nikhil loved these and had them finished in no time :D Whoopieeee!!!

The December Daring Bakers' Challenge had us all cheering - the lovely and talented Bourbonnatrix of Bourbonnatrix Bakes was our hostess and challenged us to make fun, delicious and creative whoopie pies! Delicious little cake-like cookies sandwiching luscious filling in any flavors we chose... What else is there to say but "Whoopie!"

This holiday season had been quite busy for us and I could not post this any earlier. Well, I justified myself saying "Better late than never!". I thoroughly enjoyed this challenge, Thank you Bourbonnatrix :)
