Chilli Mushroom

Mushrooms are low in calorie but high in nutritional value! They also add a unique taste and texture to our meals. In the busy lives that many of us lead, we surely tend to have certain nutritional deficiencies and  mushrooms can definitely make up for some of them. I did not fancy mushroom few years ago but recently I have had close encounters with some gorgeous varieties. Some of these deserve to be tried and I am sure, would find a place in your favorites.

Ingredients:
300 gm Mushroom, sliced thickly 
2 Onions, chopped into cubes
1 Red Pepper, chopped into cubes
small piece Ginger, finely chopped
2 - 3 Garlic cloves, finely chopped
2 -3 Green chillies, slit lengthwise
Salt, to taste
Oil, as required
2 - 3 tsp Soy sauce
1 Tbsp Sweet Chilli sauce

Method:
  • Heat little oil in a pan over medium heat and add the chopped ginger and garlic. 
  • Once the raw smell goes, add the chopped onions and slit green chillies. Saute until the onions starts to turn brown in color.
  • Now add the sliced mushrooms and cook until tender (mushrooms will leave water). This will take around 7 - 8 mins and the mixture would have been dried and browned a little by then.
  • Stir in the soy sauce and sweet chilli sauce. Also add the chopped red pepper.
  • Simmer and cook for few mins and then bring to boil. Remove from fire and serve hot. Enjoy!
Notes: I have tried two varieties of mushrooms for this dish so far (chest nut mushrooms and button mushrooms). The potato chips/french fries is a crisp accompaniment preferably with a hint of garlic. Serve hot with some fried rice or wraps. If you need a saucier gravy, add cornflour paste ( a spoonful of  cornflour dissolved in 2 spoons of water) to the mixture along with the soy sauce and chilli sauce. Simmer and cook until the gravy attains the consistency you prefer.
