Chocolate Biscuit Pudding

A quick dessert? Who would not like the idea :) Well this recipe sure is handy when you are short of time & fancy ingredients. For all those who love dunking a biscuit into hot chai, look no further than this Chocolate Biscuit Pudding!!
Using very few ingredients, you can easily whip up and layer this beautiful pudding right into the serving glasses. So hope you all enjoy this biscuit pudding.

Chocolate Biscuit Pudding


Ingredients:
1 & 1/2 cup Milk
1 cup Sugar
3 Tbsp Cocoa Powder
2 Tbsp Cornflour
1 tsp Vanilla extract
200 g Digestive/ Rich Tea/ Marie biscuits,crushed
100 g Salted butter, cut into small cubes
1 cup Double Cream, whipped (optional)

Method:

  • Prepare a thick chocolaty sauce by boiling together milk, sugar, cocoa powder and cornflour, stirring continuously. Let it cool completely, then stir in the vanilla extract and mix well.
  • Meanwhile, tip in the crushed biscuits and cubed butter into a mixing bowl. Mix them well with your fingertips until they resemble coarse breadcrumbs. Keep some biscuit crumbs aside for decoration purpose.
  • Spoon and divide layer's of biscuit mixture and chocolate sauce alternately into the glasses. 
  • Dust the reserved biscuit crumbs on top or you can top with two dollops of whipped cream in each glass.
  • Refrigerate for 3 hours and serve cold.

Notes: You can try different glasswares as serving dishes for these as there is absolutely no baking involved. 
Ria's recipe suggests rum as an alternate flavour to vanilla extract. Enjoy!
