Paneer Curry {coconut milk}

Firstly, wishing you all a very Happy New Year 2015 :)

Going meatless is not all that hard. But mostly when you try to fix something special in vegetarian, Paneer is what it comes to!
Now I use paneer a lot in my kitchen and this is one recipe which pairs well with most bread items. This is a quick one to put together and always a crowd pleaser.

Ingredients:
Oil, as required
1 Tbsp Red Chilli powder
1/2 Tsp Turmeric powder
250 g Paneer, cut into cubes
Few Cloves & a piece of Cinnamon
3 Onions, finely sliced
2 Tbsp Ginger, finely chopped
2 Tbsp Garlic, finely chopped
3 or 4 Green Chillies, slit lengthwise
2 Tbsp Coriander powder
1 Tsp Garam masala or Meat masala 
1 Tomato, finely sliced
3 cups Coconut Milk
Few Coriander leaves, finely chopped
Salt, as per taste

Method:

  • Marinate paneer cubes in red chilli powder, turmeric powder and salt for 15 mins.
  • In a pan, heat some oil and shallow fry the paneer cubes. Keep it aside.
  • In same pan, heat oil and add the cloves and cinnamon. Then add the sliced onions and saute until they turn soft.
  • Now add the chopped ginger-garlic and green chillies and fry them until the raw smell goes. 
  • Tip in the coriander powder and garam masala or meat masala and saute further for few mins. 
  • Add the chopped tomato and cook until it turns soft.
  • Add the fried paneer cubes and combine well with the onion tomato mixture.
  • Pour in the coconut milk, salt and cook for 8 more mins.
  • Remove from fire and mix in the chopped coriander leaves. Serve hot.

Notes: I use the coconut milk powder mixed in hot water. You can change the consistency of gravy by adjusting the thickness of coconut milk. 
I also used a little black pepper powder to spice it further.
