Eggless Chocolate Cupcakes

Valentine's Day is round the corner and everyone is thinking red roses and chocolates and fresh flowers and ... chocolate cupcakes???

Nailing a good eggless cake recipe was definitely tense! Once you try this recipe, you are going to ask yourself "This did not use eggs... really? " Well, that is what Nikhil kept asking me while gobbling on one of these extremely chocolaty cupcakes with a smooth cream cheese frosting :D
One other thing is that this is a very simple recipe to put together giving gorgeous cupcakes.

Chocolate Cupcakes with Cream Cheese frosting {Eggless}

eggless cupcake

1 1/4 cups Plain flour
1 cup Sugar
1/3 cup Cocoa powder
1 tsp Baking soda
1/2 tsp Salt
1 cup Warm Water
1 tsp Vanilla extract
1/3 cup Oil, I used olive oil
1 tsp White Vinegar or Cider Vinegar

  • Preheat oven to 350F/ 180C or 160C Fan. Line a cupcake tray with paper liners and keep aside.
  • In a large mixing bowl,tip in plain flour, sugar, cocoa powder, baking soda and salt. Mix well until combined.
  • Pour in the warm water, vanilla extract, oil and vinegar. Using a whisk, mix well just until combined. Do not over mix.
  • Using a ice-cream scoop, fill the cupcake liners almost 3/4th full. (I got exactly 12 cupcakes).
  • Bake them for about 22 minutes or until a skewer inserted into the center of a cupcake comes out clean.
  • Remove from oven and let it cool completely on a wire rack.
  • Prepare your desired frosting and decorate the cupcakes before serving.
Notes: These are simply the best eggless chocolate cupcakes which can be whipped up in a single bowl. Enjoy these with your favorite frosting and this sure will be a recipe you will come back to. I had opted for a cream cheese frosting here :)
