Bonda { Potato / Aloo / Urulakazhanghu } !!!

Yet another popular recipe from Kerala, to add to the Tea Time snacks! During my college days, this snack had a regular show on our evening snack menu. I remember it used to be quite oily, still we had to rush in, before they were completely sold out. I have to say that the homemade version is much healthier and tastier :) and I am sure you will love them too...

{ Potato / Aloo / Urulakazhanghu } Bonda !!!

Ingredients:
3 Potatoes, boiled & roughly mashed
1 Onion, finely chopped
Small piece Ginger, finely chopped
2 Garlic cloves, finely chopped
2 Green chillies, finely chopped
A bunch Coriander leaves, finely chopped
1/2 tsp Turmeric Powder
1 cup Besan Flour
1/2 tsp Red Chilli Powder
Pinch of hing / asafoetida
Salt, to taste
Water, as required for batter
Oil, for deep frying

Method:
  • Peel and boil the potatoes until soft. Roughly mash it and keep aside.
  • Heat little oil in a pan and saute the onions until it turns translucent. Add salt as required and mix well.
  • Now add the finely chopped ginger, garlic and green chillies and saute further until the onions start to turn golden brown.
  • Add the mashed potatoes, 1/4 tsp turmeric powder and required salt and mix well. Sprinkle the finely chopped coriander leaves and combine the mixture on heat for few more mins. Let it cool.
  • Once you can handle the mixture in hands, make small balls of this potato mixture and keep aside.
  • Next you prepare the batter with besan flour, chilli powder, turmeric powder, salt, asafoetida and water. (considerably a thick batter to coat the potato mixture balls).
  • Heat oil in a pan for deep frying, dip each of the potato ball mixture into the besan batter. 
  • Cautiously drop them gently into the hot oil. Fry until they turn golden brown. 
  • Drain it on a kitchen towel and transfer to a serving dish.

Notes: These bonda's are good to be eaten on its own but it can be accompanied with chutneys or sauces. Another variation of these bondas are made with Plain flour batter instead of Besan flour. Hope you have a wonderful tea time with your family/friends.
